Basic Quinoa Salad Recipe

I've been slapping together quinoa salads for guests with whatever ingredients I have at hand, and people have been asking me for my recipe. It's really simple and easy to throw together. Since I already typed this out to a friend, I might as well post it here.


























Bring 1 cup uncooked quinoa and 2 cups chicken stock to boil, reduce to simmer 15 minutes.

In the meantime, chop up 3 stalks of celery, 1 bell pepper, handful of baby carrots, handful of black olives, and 2 handfuls of mixed greens. Add a can of drained sweet corn.

After quinoa is done cooking, chill quinoa in the freezer for 10 minutes (you don't want to add piping hot quinoa into the mix), then add to the rest of the ingredients.

Sprinkle as much feta cheese as you want (I used probably a quarter cup). Add sesame and lemon ginger sesame dressing, and a little bit of sea salt to taste. Mix well. (The dressing is from Costco, I got this one: http://lifewithasideofsarcasm.files.wordpress.com/2012/02/img_0496a.jpg)

Makes 5 generous servings. Serve warm or chilled. Costco is your friend.

Other variations I've done: Bleu cheese instead of feta, add chicken breast or tofu or ground turkey, use balsamic vinaigrette instead. Add pesto instead of sesame… total flexibility.

Ready in 30 minutes.
