Banana Cinnamon Crumble Muffins Recipe

Very tasty banana muffins with a cinnamon sugar crumble on top. Don't skip the crumble! It's the best part!


The muffins:

3 large very ripe bananas mashed
1 1/2 cups white whole wheat flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 tsp vanilla extract
1/2 tsp nutmeg
1/4 tsp cinnamon
1 egg beaten
1/2 cup white sugar
1/2 stick of butter melted

The crumble:

2 tbsp flour
1 tbsp butter at room temperature
1/4 tsp cinnamon
1/4 cup brown sugar

1. Preheat oven to 375 degrees F. Lightly grease muffin tin with cooking spray.

2. Combine all the dry ingredients in a large bowl. In another bowl, combine all the wet ingredients and whisk well. Stir the banana mixture into the flour mixture. Spoon batter into muffin pan until all 12 wells are filled - about 2 tbsp of batter in each well.

3. To make the crumble top, knead flour, butter, cinnamon, and brown sugar until the mixture resembles wet sand. Evenly sprinkle on top of each muffin.

4. Bake for 20 minutes.

Yields 12. Around 200 calories each.
